so I've got a new knife this littlebeauty and I thought I'd take it for a
test run making my lunch and a littlebit of a confession
I love KD absolutely love KD I knowthat I shouldn't but I do
and so that led me to take one of therecipes that we did about three and a
half years ago on the channel for a onepot pasta and sort of change it. smaller
portion not as many ingredients a littlebit easier to make it for lunch so first
things first is chopped up this baconand then I'm going to fry it off in that
saucier once the bacon is crisped up Ipull that out and set it aside and now I
put in a little bit of diced red onionand we just want to soften that we don't
want to give it any color once the onionhas softened and it only takes a moment
in goes the dry pasta
milk, chicken stock.
give that a stir. Little bit of a salt
and some pepper put on a lid and bringthat up to a boil and let it boil for 12
to 15 minutes.
So about halfway through the cooking Itook the lid off the pasta and gave it a
stir just to check out how quickly thepasta was cooking how much of the milk
and the chicken broth were soaking intothe pasta because we're we're not
draining this pasta the milk and thechicken stock become part of the sauce.
So you need to keep a little bit ofchicken stock back to add it in if it
gets too thick or take the lid off andlet it cook off a little bit if it's too
thin and and this is your own judgmentcall you have to figure out what you
like or what you want it to be. This isalmost at the point that I want it to be
got a tasting spoon big jug of tastingspoons over there use them once throw
them away throw them in the dish sothat's ready to go put the bacon back in
and now I've grated two kinds of cheeseone is a cheddar and we put that in stir
it in and you can stop there if you onlywant to use cheddar that's great
Cheddar's all you need I've chosen to doa little bit of provolone today as well
so I'll just grate a little bit more ofthat and I find the two cheeses work
really well together in terms of meltingand giving me the flavour profile that I
want of course you could at the endgrate over anything you want.
Pecorino or Grana Padanoanything, any cheese, blue cheese in here
blue cheese would be fantastic in it alittle bit of oka, oka would be really
good in this mix that in look at howthick and cheesy that is Oh fantastic
and that's lunch so in about the sameamount of time that it would take me to
make a box of KD I've made somethingthat is much more flavourful that I can
control the ingredients then I can addto if I wanted to put in peas I could
put in peas I could put in broccoliyou could leave out the bacon and
instead put in salmon this is just somuch better

This is a super quick and easy lunchtime recipe - the pasta cooks right in the sauce, no draining, no roux, no fuss. Just an amazing macaroni and cheese recipe, quick pasta for lunch. Ingredients: 4 slices of bacon, diced ½ onion, diced 120g (4 ounces) dry pasta 250 mL (1 cup) milk 125 mL (½ cup) chicken stock (or water) Salt and pepper to taste 70 mL (¼ cup) shredded cheddar cheese 70 mL (¼ cup) shredded provolone Method: Dice the onion and bacon. Sauté the bacon until crisp and then remove from the pan. In the same pan sauté the onion in the bacon grease. Once the onion has softened, add the dry pasta, milk, chicken stock, salt and pepper. Cover and bring to a boil (watch that it doesn’t boil over) - cook until pasta is tender and has absorbed most of the liquid. You may need to add liquid to loosen the sauce. Shred the cheese into the pot and stir to combine and melt. Return the bacon, and adjust the seasoning. That is just the ‘Basic’ method… you could: Use whatever cheese you want. Use water instead of chicken stock. Add green onion as a garnish at the end. Add hot sauce. Add peas, broccoli, spinach, or other vegetables.
